Pumpkin Roll Recipe

Time for my monthly post!  haha  Tonight I wanted to share a favorite fall recipe.  I have always loved my mom's pumpkin roll and it's super easy to make!  Since I had two parties this weekend, it was a good reason to make some and share it with friends.  Enjoy!

Ingredients for one pumpkin roll (I recommend doubling it though!)
roll:
3 eggs
1/3 cup pumpkin
3/4 cup sugar
 3/4 cup flour
1 tsp baking soda
1 tsp cinnamon

filling:
6 oz cream cheese
1 cup 10x sugar
1/2 tsp vanilla
4 tbsp butter

1.  Preheat the oven to 375.
2. Beat together the 3 eggs, pumpkin, sugar, flour, baking soda and cinnamon.
3. Spray or grease a jelly roll pan (I use a 10" x 15")
4. Spread batter in pan and bake for 15 minutes at 375*.
5. Lay out 2-3 paper towels and sprinkle with 10x sugar.
6. Loosen pumpkin roll with spatula and flip onto paper towels.  Then roll up pumpkin roll in the paper towel and let cool for 1 hour.

Make the filling:
Mix 6 oz. cream cheese and 4 TBSP butter.  Add 1 cup 10x sugar and 1/2 tsp vanilla.

Unroll the pumpkin roll, spread with filling, roll it back up and wrap in saran wrap.   Refrigerate.
